  • Apples 3 ( 1 grated apple, 1 fine chopped),half n half milk 3 cup high fat milk 2 n half cup, almonds, cashew, walnuts, pistachios, resins ( a handful),batasha 6,sugar 1/2 cup, Kewra water 1 drop,kesar color a pinch, salt a pinch,kesar strands 3 to 4,mitha attar 2 drops,bay leaf 1, elaichi, cloves, cinnamon 1, nutmeg powder a pinch,dry milk powder 1 tablespoon, singhoda flour 1/2 tablespoon, ghee 3 tablespoon, white oil half tablespoon, a pinch camphor ,banana leaf, plate.

Directions

  • First in grate 1 apple, and chopped finely another apple, keep another apple for decoration. Now take all nuts and dry roast it ,keep aside half nuts for paste and half leave in pan for toss in ghee in low medium flame. Now keep nuts in pan after frying separately with unfried resins. In mixer grinder grind nuts with one forth half n half milk to make fine paste keep it in bowl add kesar color, dry milk powder and stir it well so that no lumps remain in it. In another pan add 1 tablespoon ghee with white oil ,add grated apple add all whole spice, nutmeg, bay leaf ,salt and add kesar strand 2, and cook it well until apple leaves the pan , same mechanism like carrot halwa, once cooked keep aside in another pan boil 2 types of milk and cook once its starts boiling add cooked apple.
  • And stir it well until milk and stir it well once milk becomes less add mixture of nuts milk and cook it for another 10 mins now add a pinch of camphor powder add 2 batasha, sugar, and cook it for 5 mins, take 2 tablespoon of milk and add singhoda flour to thicken the bhav sagar ,now add milk ,and cook it for 5 mins,once bhav sagar is slmost cooked add meetha attar, rose water, now bhav sagar is done garnish in mud clay pot soaked in water for 10 mins.
  • Bhav sagar is garnished with chopped apples, fried nuts, kesar strands, resins in mud clay pot under banana leaf with decorated apple in the form of hen, chopped apples, nuts, batasha and before serving keep it in normal temperature and refrigerate it with sealed aluminum foil to protect it from ice.
